Black Bean Brownies – Picky Eater Approved

Black Bean Brownies

Delicious and Healthy Alternative to traditional brownies

Equipment

  • Food Processor
  • Muffin Tin

Ingredients

  • 1 3/4 C Canned Black Beans (washed & drained)
  • 3 T Coconut Oil (melted)
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1/4 C Honey (or other sweetener of choice)
  • 1 1/4 tsp Baking Powder
  • 2 Med Eggs (may use egg substitutes)

Instructions

  • Preheat oven 350 degrees farenheight
  • Grease muffin tins
  • Slowly add each ingredient to food processor beginning with the eggs
  • Fill muffin tins about 3/4 to top with mixture
  • Bake for 25 minutes
  • Let sit for about 5 minutes to cool & enjoy!
